Strawberry Muffins!

I love to bake! It's the mess that it makes that I despise. My new years resolution is to cook more and eat out less, thus the blog! So if anyone has any great recipes please share. As this blog continues we will be trying out new products and doing our personal ratings on them etc.

So the 1st recipe up is Strawberry Muffins. I used the *allrecipes.com website to start off and tweaked it a little. We had some frozen strawberries that needed to be eaten and I like to cook from scratch if possible and if I'm not being lazy :) If you're looking for simple and easy this is it.


 The batch made a little more than I was expecting notice the full mini muffins...
 These came out nicely, I did bake the larger muffins 5 min longer than the minis.
I would have added maybe just a little more strawberries but overall not to bad. The cinnamon sugar on top gave it a little something extra which I liked and then I also added a little extra vanilla. After trying these out next time I might add some cream cheese in the middle or add brown sugar. What do you guys think?

Recipe:

Ingredients

  • 1/4 cup canola oil
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup white sugar
  • 1 3/4 cups all-purpose flour (I used a little less)
  • 1 cup chopped strawberries
  • I added cinnamon sugar onto the tops before baking
  • And about a tsp of vanilla

Directions

  1. Preheat oven to 375 degrees F (190 degrees C) oil an 8 cup muffin tin, or use paper liners.
  2. In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
  3. Fill muffin cups. Bake at 375 degrees F (190 degrees C) for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.
